Apple Cobbler Cake

Apple Cobbler Cake, How do I Love you let me count the ways…
You’re Fluffy, warm, sweet, juicy and spicy; just to name a few.

This recipe is super easy even a beginner cook can prepare it and wow their family. I’ve always loved Cobbler so I thought wouldn’t it be great to have a combination of Cobbler with a more fluffy Cake-like batter.


So I decided to give it a try, on Sunday I threw together a bunch of ingredients and this is my creation; it’s what happens if Cobbler and Cake have a baby they get Cobbler Cake. After all of my work was done I knew that the final test was Mr. Southern, he’s not generally a fan of Fruit Desserts like Pie or Cobbler, but like usual I gave him a plate of warm Cobbler and waited. I don’t accept “I’m not hungry” in my house you get a plate of food whether you want it or not. After leaving my gift I went back downstairs and waited patiently in the kitchen, cleaning up my dish explosion; and then it happened, he came back and said it was delicious and could he have seconds. Music to my ears. And So This Day Was Born Apple Cobbler Cake, Long May She Live.
 

Ingredients :
6 Granny Smith Apples
1/2 Cup Sugar
1 tsp Ground Saigon Cinnamon
1 tsp Lemon Juice
1 Tbsp Cornstarch
Pam Cooking Spray

Ingredients For Batter:
1 Cup Cake Flour
1 Cup Sugar
1/2 Cup Melted Butter
1/2 Cup Whole Milk

1. Wash all of your Apples in Vegetable Wash and dry with a Paper Towel.

  • I use my favorite Apple for Cobbler and Pie, Granny Smith Apples; they’re crisp, juicy and tart with a firm texture.

 

2. Cut the apples in large chunks making sure not to use the hard core in the middle

  • Place all off your apples in a 3 Quart Pot.

3. Add Sugar, Cinnamon and Lemon Juice and Cornstarch to the apples

  • The Lemon Juice helps the apples stay fresh
  • I have recently discovered Saigon Cinnamon and I’m in Love with it, it’s much richer than regular Cinnamon and not as gritty.

4. Stir all of your Ingredients together and let cook on medium heat for 20 minutes until soft

  • Make sure to stir about every 5 minutes to keep from burning.
  • The Apples will have a nice Glaze from the Cornstarch.
  • Once Cooked set aside to cool.

5. Get out a metal 8×8 Pan and spray with Cooking Spray.

  • Pour your Apples into the Pan and spread out evenly with a Rubber Spatula.

Now it’s time to mix up the Batter for the Crust

1. Mix Flour, Sugar, Melted Butter and Milk in large bowl.

2. Mix all of your ingredients with a whisk until smooth and creamy

3. Pour the Batter onto the top of you Apple mixture

  • Spread it evenly with a Rubber Spatula.

4. Sprinkle to top of the Batter With Saigon Cinnamon.


 
5. Bake at 350 degrees fro 25 minutes.

  • It will be Golden Brown on top when done.

6. Once cooked let cool for a few minutes.

Put on a Plate with Ice Cream or Cool Whip and Enjoy!
